Bird is the word for Taco Tuesday!
Have we mentioned how much we love chicken? It's versatile and healthy, and more importantly, it is cheap and easy to make for company or the whole family. Here are some of our favorite chicken taco recipes, although you could easily substitute pork, seafood, or your favorite vegetarian protein like tofu or tempeh.
This bright tasting, tender shredded chicken recipe gets it flavor from a richly-spiced tomato sauce. Feel free to skip the stove and just dump everything into a slow cooker instead. For an extra kick, throw in a few chipotle peppers.
Cola might seem like an odd secret ingredient, but just trust us that it really nicely tenderizes and flavors the chicken. Once you start adding soda to your marinades, you'll never go back.
Like the coke in the above recipe, the tamarind soda tenderizes the meat and infuses it with a delightful tamarind flavor. We're a big fan of killing two birds with one stone, and this method is way easier than working with actual tamarind.
By mixing ground chicken into the chorizo, you get all the chorizo flavor with half the calories. Add garlic and three different kinds of chili, and you have an amazing, indulgent taco filling. Top with avocado, black beans, Greek yogurt and cilantro.
How can you go wrong with sweet and spicy ground meat topped with mango-onion coleslaw, all shoved into a tortilla? Feel free to use ground chicken, pork or turkey for this. It would be great with shrimp, too.
These fusion tacos are simply incredible, and the extra effort is totally worth it. If you don't have a smoker or don't feel like breaking it out, fear not! You can very easily smoke your chicken (or anything else) on the stove (info here).
Got some leftover fried chicken? Throw it into a tortilla and top with this divine ranch/lime/cilantro/jalapeno dressing. You won't regret it.
Stuff your tortillas with green chili chicken (canned or leftover chicken works great too) and fry the whole thing! Seriously! It's as tasty as it sounds.
