Healthy Milk Chocolate? It Could Be Real!
Due to recent healthy eating trends, most of us are disappointed that dark chocolate doesn't taste as good as the more sugary, less-healthy milk chocolate we all know and love.
This doesn't always have to be the case, though. According to the Journal of Food Science, a study has been conducted using different ingredients to try and make a healthier milk chocolate that agrees with our taste buds. However, there is a chance it might not be great for those with a peanut allergy.
Delish reports that scientists from North Carolina State University tried using peanut skins, which are typically thrown out as scraps from plants that process peanuts, to alter the taste of dark chocolate for the better. The skins were made into a powder, which was then combined with maltodextrin, a carbohydrate that tastes a little sweet, to combat the bitter taste of dark chocolate.
As chocolate is known for being rich in antioxidants, these researchers know that all we really want is a healthy milk chocolate indulgence, and based on the results from the taste tests of this new combination of ingredients, we might get just that. Many who taste-tested the modified chocolate liked it almost as well as the real thing.
The powdery peanut and maltodextrin compound added just the right amount of sweetness to the chocolate, without even adding much of a peanut taste. In fact, many testers said the difference in taste was barely noticeable. Then again, it’d probably be very noticeable to those with a peanut allergy, so if this becomes available to the public in the future, buyers will have to look out for the allergy warning. Who knows, we might even have a cure for the peanut allergy by that time, so most everyone would be able to enjoy the healthy new treat.
I know one thing for sure: Halloween would be forever changed for the better. Imagine all of the substitutes that would allow us to indulge just a little more…healthier milk chocolate used for our peanut butter cups, candy bars and cookies would make for some very happy parents.
