  • 1/2 cup unsalted butter, softened
  • 1 egg
  • 1/2 cup sour cream (or plain yogurt)
  • 1 small box instant vanilla pudding mix (3.4 oz)
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 cup of bread flour
  • 1 cup of cake flour
  • 2 tsp mint extract
  • 3 drops of blue coloring and 10 drops of green coloring
  • 1 1/2 cups chocolate chips (plus more if desired)
Directions:
  1. Preheat oven to 375 degrees F
  2. In a bowl, cream together sugar and softened butter. Once combined, add in the egg, sour cream, and pudding mix
  3. In a separate bowl, combine the flours, salt, and baking soda
  4. Slowly incorporate flour mixture into the butter/pudding mic and fold until just combined
  5. Add mint extract and food coloring and mix until desired color is achieved
  6. Add in chocolate chips.
  7. Scoop out the cookie dough with a 2 inch ice cream scooper and drop on baking sheet
  8. Bake for about 10 minutes, remove from the oven, let cool, and enjoy!
