Tis the season for green-colored food galore! St. Patrick’s Day is around the corner and the streets are about to be flooded with green. From green bagels to green eggs and even green beer, the sky’s the limit on what you can dye in celebration of Saint Patrick. We’re joining the trend and dying our mint chocolate chip cookies green to symbolize the shamrock symbol of Ireland. So, get your green food dye ready, we’re going in!
Mint chocolate chip is usually an ice cream flavor but we’re taking it out of the freezer and enjoying it in cake-like dough forms. If you like thick, cake-like, yet chewy cookies, then this recipe is for you. Thanks to a secret ingredient, we were able to achieve the perfect consistency in these cookies that forever changed our lives. The secret ingredient, being
pudding mix, adds a level of moisture to these cookies that makes them extremely special. Trust us, you’re going to want a break from Irish Car Bombs to indulge in these.
Ingredients:
- 1 cup sugar
- 1/2 cup unsalted butter, softened
- 1 egg
- 1/2 cup sour cream (or plain yogurt)
- 1 small box instant vanilla pudding mix (3.4 oz)
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1 cup of bread flour
- 1 cup of cake flour
- 2 tsp mint extract
- 3 drops of blue coloring and 10 drops of green coloring
- 1 1/2 cups chocolate chips (plus more if desired)
Directions:
- Preheat oven to 375 degrees F
- In a bowl, cream together sugar and softened butter. Once combined, add in the egg, sour cream, and pudding mix
- In a separate bowl, combine the flours, salt, and baking soda
- Slowly incorporate flour mixture into the butter/pudding mic and fold until just combined
- Add mint extract and food coloring and mix until desired color is achieved
- Add in chocolate chips.
- Scoop out the cookie dough with a 2 inch ice cream scooper and drop on baking sheet
- Bake for about 10 minutes, remove from the oven, let cool, and enjoy!
