Serves: 6 Ingredients
  • 1 (9 oz.) package dried udon noodles
  • ½ cup chicken broth
  • 1 ½ tbsp minced fresh ginger root
  • 3 tbsp low-sodium soy sauce
  • 3 tbsp chunky peanut butter
  • 1 ½ tbsp agave or honey
  • 2 tsp chili garlic hot sauce
  • 3 cloves garlic, minced
  • 1 small rotisserie chicken; pulled
  • Toppings
    • ¼ cup green onions, chopped
    • ¼ cup chopped peanuts
    • ¼ cup chopped fresh cilantro
    • ½ of a lime
    • Sriracha (optional)
Directions
  1. Boil the udon noodles in a large pot until soft (about 10-12 minutes). Drain and set aside
  2. In a saucepan, whisk together the chicken broth, ginger, soy sauce, peanut butter, honey, chili garlic hot sauce, and garlic over medium-high heat. Bring to a boil, and cook until the sauce is well mixed and the peanut butter has melted
  3. Add the udon noodles and pulled rotisserie chicken into the sauce. Toss until the noodles are well coated
  4. Transfer the noodles to a bowl and top with green onions, chopped peanuts, cilantro, lime juice, and optional sriracha.
Easy peasy, right? This recipe takes 25 minutes to make and only takes a few ingredients to accomplish.
