Udon may be an uncommon term for most people, but it may be more familiar than you think! They are basically thick wheat noodles that originated from Japan and is often enjoyed in a nice warm broth. For all the home cooks out there, udon noodles can be found in the refrigerated section of your grocery store. It usually comes in a vacuum-sealed plastic pouch, ready to be served after a quick bath in boiling water.
For this recipe, we are stripping these udon noodles from the comfort of its usual broth base and dressing it up with creamy peanut butter sauce.

Ingredients
- 1 (9 oz.) package dried udon noodles
- ½ cup chicken broth
- 1 ½ tbsp minced fresh ginger root
- 3 tbsp low-sodium soy sauce
- 3 tbsp chunky peanut butter
- 1 ½ tbsp agave or honey
- 2 tsp chili garlic hot sauce
- 3 cloves garlic, minced
- 1 small rotisserie chicken; pulled
- Toppings
- ¼ cup green onions, chopped
- ¼ cup chopped peanuts
- ¼ cup chopped fresh cilantro
- ½ of a lime
- Sriracha (optional)
Directions
- Boil the udon noodles in a large pot until soft (about 10-12 minutes). Drain and set aside
- In a saucepan, whisk together the chicken broth, ginger, soy sauce, peanut butter, honey, chili garlic hot sauce, and garlic over medium-high heat. Bring to a boil, and cook until the sauce is well mixed and the peanut butter has melted
- Add the udon noodles and pulled rotisserie chicken into the sauce. Toss until the noodles are well coated
- Transfer the noodles to a bowl and top with green onions, chopped peanuts, cilantro, lime juice, and optional sriracha.
Easy peasy, right? This recipe takes 25 minutes to make and only takes a few ingredients to accomplish. If you don’t have all of those ingredients on hand, fear not, it can be simplified even further. The only key ingredients for this recipe are the udon (or any type of noodles/pasta you have on hand), soy sauce, garlic powder, sriracha, and of course, the star of the show, peanut butter. These ingredients are usually more readily available than all of the others, so you have no excuse not to try this dish!
