Rainy days call for your couch, a movie and a nice ole hearty recipe to set you up for a food coma. No worries, we made sure these recipes are easy to whip up (all it takes is a coffee mug and a couple minutes of your time) so you can maximize your rainy day relaxation.
Ingredients
- ⅓ cup (1 ½ oz/45g) pasta
- 1 cup (8 oz/ 230g) water, hot
- 2 teaspoons cornflour (cornstarch)
- 4 tablespoons pasta sauce (tomato sauce)
- 2 tablespoons milk
Instructions
- In a large microwaveable mug or large bowl add in the pasta and the water. You will need a large mug as the water will boil up.
- Microwave for roughly another 3 ½ minutes or until tender. You will want the pasta to be fully cooked. (timing is based on my 1200W microwave so your timing might vary)
- Pour off the remaining cooking water.
- Stir in the cornstarch, tomato sauce and milk and microwave for a final 60 seconds or until sauce thickens. The cornstarch is the thickener for the sauce.
- Stir well, season with salt and pepper and enjoy.

Funfetti Mug Cake
Ingredients
- 4 tbsp all purpose flour
- ¼ tsp baking powder
- 2 tsp granulated white sugar
- 3 tbsp fat free milk (see note)
- ½ tbsp vegetable oil
- ⅛ tsp vanilla extract
- 1 ½ tsp sprinkles
Instructions
- In a microwave-safe mug (that can hold at least 8 oz of liquid), add flour, baking powder, sugar, milk, oil, and vanilla. Mix with a small whisk until batter is completely smooth.
- Stir in 1 tsp of sprinkles. Sprinkle remaining ½ tsp of sprinkle on top.
- Cook in the microwave for about 1 minute, or until cake looks done. Let cake cool a few minutes before eating. Cake is best consumed right after the few minutes of cooling time.
Notes
You can substitute with other types of milk but I found fat-free milk yields the best results.

Spinach Ricotta Lasagna in a Mug
Ingredients
- ½ fresh lasagna sheet
- 2 ½ cups (75g) baby spinach, roughly chopped
- ¼ medium yellow bell pepper, diced
- ¼ cup part-skim ricotta cheese
- 3 large basil leaves, finely chopped (optional)
- ¼ tsp kosher salt
- ⅛ tsp granulated garlic
- 6 TBS pasta sauce or tomato sauce
- ⅓ cup shredded part-skim mozzarella
Instructions
- Cut the lasagna in half, and cut each strip in half again. Place the pasta sheets into a bowl, adn pour very hot water in it, until it covers all pieces. I used boiled hot water from my electric kettle. Set the pasta pieces aside.
- Chop the spinach and place it in a microwave-safe bowl. Cover teh top with plastic wrap and poke a few holes in it for ventilation. Microwave for 1 minute. Take the spinach and let it rest.
- Grate the mozzarella while you wait for the spinach to cool.
- Mix the spinach with the ricotta, pepper, granulated garlic, and salt. Set mixture aside.
- Pour 2 tablespoons of pasta sauce at the bottom of the mug. Top With a piece of softened pasta sheet. Add some spinach mixture, 2 tablespoons of mozzarella, and a pasta sheet. Continue building the lasagna, ending with a layer of pasta sheet on top. Sprinkle mozzarella over the pasta.
- Microwave everything for 1 minute 30 seconds. Check to make sure that the mozzarella is melted. If it isn’t, continue microwaving at 15-second intervals until the cheese is fully melted.
- Serve immediately.

Snickerdoodle Mug Cake
Ingredients
- ¼ cup + 2 tablespoons all-purpose flour
- 2 tablespoons sugar
- ¼ teaspoon baking powder
- ¼ teaspoon cinnamon
- ¼ cup milk, at room temperature
- 2 tablespoons salted butter, melted and cooled
- ½ teaspoon pure vanilla extract
For layering/topping:
- 1 tablespoon sugar
- ¼ teaspoon cinnamon
Instructions
- In a small bowl, whisk together four, sugar, baking powder, and cinnamon until thoroughly, completely combined, with no streaks or any ingredients remaining. Blend in milk, butter, and vanilla until batter is smooth. Into a 1-ounce (or larger) microwave-safe mug with straight sides, scoop a big spoonful of batter, then sprinkle with a spoonful of cinnamon sugar. Alternate layers, ending with cinnamon sugar.
- Microwave on high for 1 to 1 ½ minutes, or until cake is done to your liking. Allow to cool for a couple of minutes before serving.
Notes
A tall, cylindrical mug with straight (not angled) sides will ensure that the cake bakes evenly. I found a 14-ounce mug to be the perfect size to allow the cake to rise up while baking without overflowing. (I filled my mug to the top with water and then transferred the water to a measuring cup to determine its capacity.) If you use a smaller mug, you may want to bake the cake on top of a plate or paper towel to catch any possible overflow.
The strength of individual microwaves can vary. The first time you make this recipe, be prepared to experiment a bit to make sure that 1 minute is the perfect length of time of baking time. The nice thing about this cake is that even if its uncooked, you don’t have to worry about raw eggs!
Unsalted butter will work justine in this recipe, but I find that using salted butter adds a tiny flavor boost.

Microwave Pizza in a Mug
Ingredients
- 4 tablespoon flour
- ⅛ teaspoon baking powder
- 1/16 teaspoon baking soda
- ⅛ teaspoon salt
- 3 tablespoon milk
- 1 tablespoon olive oil
- Marinara sauce
- Mozzarella
- Pepperoni
- Dried Italian herbs
Step 1
- Mix the flour, baking powder, baking soda and salt into a large microwaveable mugs.
Step 2
- Add milk and oil and stir.

Instant Mug Chili
Ingredients
- 1 (14.5 oz.) can Dei Fratelli Chili Ready Diced Tomatoes
- 1 Cup Kidney Beans drained and rinsed
- ¼ Cup Ground Beef cooked
Instructions
- Combine all ingredients into 1 large or 2 regular-sized mugs. Place in the microwave and cook on high for 2 - 3 minutes. Stir and continue cooking for another 1 - 2 minutes.

Chocolate Mug Cake
Ingredients
- 3 Tbsp all-purpose flour
- 2 Tbsp granulated sugar
- 1 Tbsp unsweetened cocoa powder
- ¼ teaspoon baking powder
- Dash salt
- 3 tablespoons milk (any kind of milk)
- 1 tablespoons canola oil (or melted butter)
- ⅛ teaspoon vanilla extract
- 1 tsp chocolate chips, or your favorite flavor baking chips
Instructions
- Spray the bottom of a microwave-safe mug or coffee cup lightly with cooking spray.
- Add flour, sugar, cocoa powder, baking powder, and salt and stir together.
- Add milk, canola oil, and vanilla extract and stir until smooth, being sure to scrape the bottom of the mug. Stir in chocolate chips or sprinkle them on top.
- Cook in microwave for 70 - 90 seconds (see note) until cake is just set, but still barely shiny on top. (see notes below). Allow to rest in microwave for 1 minute before consuming.
