Can you make Sloppy Joe Healthy
Ah, the joy of eating Sloppy Joe, an American classic made with ground beef, a sweet tomato/ketchup-based sauce between two hamburger buns. No competition, right? But the problem with it is that regardless of how healthy it is, it is far from being healthy.
However, with the recipe mentioned here, you can finally enjoy Sloppy Joe without worrying about your health. Instead of buns and a sauce filled with refined sugar, for this recipe, vegetables are used and stored in a glass meal prep container. So now you can enjoy an easy and flavorful meal that you can make on the weekend and enjoy throughout the week.
INGREDIENTS
For the Sloppy Joe
- 1 lb ground beef
- 1 onion, diced
- 1/2 cup water
- 2 tbsp coconut sugar
- 1 tbsp coconut aminos
- 1 tsp garlic powder
- 2 tbsp green onion, sliced
- 2 tsp apple cider vinegar
- 1/2 tsp sea salt
For the meal prep bowls
- 2 medium sweet potatoes, diced
- 1/2 tsp sea salt
- 2 tbsp avocado oil
- 3 cups broccoli, steamed and lightly salted
For the sloppy joe
- Add the diced onion and ground beef to a large skillet. With a wooden spoon, crumble the beef, and cook it until the beef gets brown color. Be sure to drain some of the excess fat.
- Stir together the coconut aminos, coconut sugar, tomato sauce, water, and seasonings (reserving the green onion) and then add to the skillet. Stir well to coat and then bring to a low simmer. Allow simmering on low for about 8-10 minutes.
- Top with green onion and then divide between 4 meal prep bowls.
For the meal prep bowls
- Preheat the oven to 400 F and use a parchment paper to line a baking sheet. Be sure to the season after adding the sweet potato and coating with avocado oil. Toss to combine.
- Now start baking in the preheated oven for 35 minutes. Flip halfway through, or until the sweet potatoes have been cooked as per your requirement.
- Now divide the sweet potato and steamed broccoli among the meal prep bowls.
