Appetizer: Apple Crunch Cakes

Ingredients

  • 2¾ cups water
  • ¼ cup applesauce, unsweetened
  • 2 tablespoons honey
  • ¼ teaspoon vanilla extract
  • 1 egg
  • 1 cup dried apple chips
  • 1 tablespoon baking powder
Directions
  1. Preheat oven to 350 F.
  2. Blend honey, applesauce, water, egg and vanilla.
  3. Add the dry ingredients to the mix as well.
  4. Lightly grease your muffin tins and pour mixture.
  5. Bake for 1 hour and 15 minutes.
  6. Place on cooling rack.

Main Course: Salmon Cakes

Salmon Cakes Ingredients
  • 3 tablespoons extra olive oil, divided
  • 1 pound skinless, wild-caught salmon fillet
  • Salt and freshly ground black pepper, to taste
  • 2 zucchini, finely grated and squeezed firmly to remove excess water
  • 1 tablespoon Dijon mustard
  • 1 egg, beaten
  • ¾ cups plain breadcrumbs
  • Lemon wedges, for serving
Directions
  1. Heat 2 teaspoons of the oil in a large skillet over medium-high heat. Season the salmon all over with salt and pepper and cook, flipping once, until golden brown and just cooked through, about 7 to 8 minutes. Once cool, break into small flakes in a bowl, removing any bones. Add the zucchini, mustard, egg, and ¼ teaspoon of pepper and toss gently to combine.
  2. Form the salmon mixture into 16 (3-inch) patties, coating each lightly in breadcrumbs. Heat the remaining oil in large skillet over medium heat. Cook 1/2 the patties, flipping once, until deep golden brown and cooked through, about 6 to 7 minutes total. Transfer to a paper towel-lined plate and season with salt; repeat the process with the remaining patties. Serve the salmon cakes hot, with lemon wedges on the side.

Peanut Butter Cakes

Ingredients for cake

  • 2 eggs
  • ¼ cup finely grated carrot
  • ½ cup apple sauce
  • 3 tablespoons peanut butter
  • 1½ teaspoons baking powder
  • ¾ cup flour
Ingredients for frosting
  • ½ cup plain yogurt
  • 3 tablespoons peanut butter
Directions
  1. Before you forget, preheat your oven to 350 F. Using a hand mixer, combine the flour (any kind of flour you know your pup is okay with), baking powder, carrot, apple sauce, eggs, and peanut butter until smooth. Bake the cakes for 25 - 30 minutes and let them cool.
  2. For the frosting, mix the yogurt and peanut butter until smooth. Layer the mini cakes with frosting, or top them each individually, or do whatever your dog wants, really. You can probably use an icing bag to spell Poison and they’ll still eat it.
