Yummy Apple & Cinnamon Cake

There are certain desserts that you look forward to more than others, and this Apple & Cinnamon Cake will quickly become one of them.

It hits all of the necessary checkpoints to enter your regular after-dinner rotation: it's easy to make, it's DELICIOUS, and it has so many different flavors that you won't quickly get tired of it.

Very few desserts out there get the Cooking Panda stamp of approval, but this is most definitely one of them.

Apple filling and topping

2 Tab Cinnamon

5 Tab Sugar

5 - 6 Cup Apples, cored and thinly sliced (or cut

diced)

For the cake

2 Cup Sugar

½ Cup Mild Olive Oil, (light tasting)

½ Cup Apple sauce

4 tsp Vanilla extract

1/2 Cup Orange juice

1 pn Salt

4 Eggs, Lightly beaten

3 Cup Unbleached all-purpose flour

1 ½ tsp Baking powder

1 tsp Baking soda

1 tsp Nutmeg

Directions

Preheat oven to 350 degrees.

Grease a 12-cup tube or bundt pan with a little olive oil.

Combine the 2 tablespoons of cinnamon and 5 tablespoons of sugar. Set aside 1 tablespoon to use later for the topping

Toss sliced apple pieces with the cinnamon and sugar mixture and set aside.

For the cake, whisk together sugar, oil, applesauce, vanilla, orange juice, salt, and eggs.

Combine the flour, baking powder, baking soda and nutmeg and fold into sugar and egg mixture. Whisk well and ensure batter is nice and smooth.

Spoon a little more than one third of the batter into prepared pan. Cover with half of apple mixture, then spoon in remaining batter and top again with the apple slices.

Sprinkle the top lightly with the reserved cinnamon-sugar.

Bake in preheated oven for 1 hour or until done. Loosen sides with a butter knife, then invert cake onto a plate for serving.
