Apple Cinnamon Fritters

Ingredients

Batter:
  • 1 ½ cups flour
  • ¼ cup sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 2 teaspoons cinnamon
  • ⅓ cup milk
  • 2 eggs
  • 3 tablespoons Brainiac Brain Squeezers Cinnamon Applesauce
  • 2 honey crisp apples, cored and diced
  • Canola oil for frying
Glaze:
  • 2 cups powdered sugar
  • ¼ cup milk
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon

  1. In a large mixing bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
  2. In a separate bowl, combine milk, eggs, and Brainiac Brain Squeezers Cinnamon Applesauce. Slowly whisk this mixture into the dry mixture until just combined, then fold in diced apples.
  3. Heat about 4 cups of oil (about 3-4 inches of oil) in a dutch oven over medium-high heat until oil reaches 375 degrees.
  4. Drop about ¼ cup of batter into the hot oil. Cook each side until golden brown, about 2 minutes per side. Repeat with remaining batter ensuring to not overcrowd the oil when frying. Let fritters drain on paper towels.
  5. While fritters are cooling, make the glaze by whisking together all glaze ingredients in a small bowl. Dunk each fritter into the glaze, coating both sides. Place fritters on a wire rack to let any excess glaze drip off. Once the glaze has hardened, serve immediately.
