Heat a large pot over high heat and fill it with water. Once boiling, add the rice and cinnamon sticks. Boil for about 15-17 minutes, then drain the rice. Remove the cinnamon sticks.
Place the rice back into a pan over medium heat and add the sweetened condensed coconut milk, evaporated coconut milk, dairy-free milk of choice, and maple syrup. Bring to a heavy simmer, and reduce the heat to medium-low.
Simmer, stirring frequently, for about 20-30 minutes or until the rice is fully cooked.
Remove from the heat and let cool.
Dish up into your serving dishes, and garnish with a pinch of cinnamon and a Craize Guava Cracker!
