Ingredients
- 2 cups arugula
- 1 cup cooked lentils
- 1 avocado, thick dice
- 2 cucumbers
For Miso Dressing
- 3 tablespoons vegetable oil
- 1 1/2 tablespoons rice vinegar
- 2 teaspoons white miso
- 1/4 teaspoon sesame oil
- 1/2 teaspoon honey
- 1/2 teaspoon soy sauce
- In a bowl combine miso dressing ingredients and whisk well, set aside.
- Wash and cut ends off of cucumber, begin to spiralize and set aside.
- Begin to build salad placing lentils on bottom, then arugula, spiralized cucumbers, avocados dices and drizzle with miso dressing!
