Ingredients
- 2 boneless, skinless chicken breasts
- 12 slider buns, split
- 8oz True Made Foods Kansas City Style BBQ Sauce dip cups
- ¼ red onion, thinly sliced
- 1 cup mozzarella, grated
- 6 slices pepper jack cheese
- 2 tablespoons fresh cilantro leaves, roughly chopped
- 2 tablespoons unsalted butter
- Fresh ground black pepper as desired
Instructions
- Make shredded chicken: Place boneless, skinless chicken breasts in the bottom of a large pot, then season them with salt and pepper. Cover the chicken with 1 inch of water.
- Place the pot on the stove and bring the water to a gentle boil. Once the liquid is boiling, reduce the heat and let simmer for 8 to 16 minutes, depending upon the size, until chicken reached 165*F. Remove from water and let cool.
- Once the chicken is cooled, shred with two forks and set aside.
- Make Sliders: Preheat the oven to 350˚F. Prepare a 9x13 baking dish with parchment paper. Lightly spray the paper with nonstick cooking spray.
- Place the bottoms of slider buns in the prepared baking dish.
- In a bowl, combine shredded chicken with ½ of the True Made Foods Kansas City Style BBQ Sauce. Mix until completely coated.
- Spread chicken equally across the buns. Top with remaining True Made Foods Kansas City Style BBQ Sauce.
- Evenly sprinkle mozzarella, red onion, pepper jack cheese, and 1 tablespoon of cilantro across the chicken-topped sliders.
- Place the top buns on top of the sliders.
- Cover with foil and bake for 10 minutes.
- While baking, melt the butter. Add remaining cilantro and set aside.
- Remove foil from the pan. Brush each bun with a butter mixture. Bake, uncovered, for another ten minutes, until tops are golden. Serve immediately.
