Brownie Bottom Cheesecake

Brownie Bottom Cheesecake


For the Brownie Mixture:
  • ¾ cup flour
  • 3 tablespoons cocoa powder
  • ¼ teaspoon baking powder
  • 2 large eggs
  • 1 cup granulated sugar
  • 6 tablespoons melted butter
  • 1 teaspoon vanilla extract
For the Cheesecake Filling:
  • 14 oz. cream cheese
  • 2 large eggs, room temperature
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • ½ teaspoon vanilla extract
  • 2 tablespoons powdered sugar

  1. To make the brownie base, in a large mixing bowl add the flour, cocoa powder, baking powder, sugar, eggs, vanilla extract, and melted butter.
  2. Mix until combined and transfer the whole brownie mixture in a springform pan.
  3. Bake the brownie base for about 12 minutes in an already heated oven at 350 F or 180 C degrees.
  4. Meanwhile in a large mixing bowl mix the cream cheese, sugar, eggs and vanilla and set aside.
  5. When the brownie base will be cooked, top with the cream cheese filling and let it bake again for about 25-30 minutes.
  6. Cool completely before adding the whipped cream.
  7. When cooled, whip up the whipped cream with vanilla extract and powdered sugar and decorate the brownie bottom cheese.
  8. Chill and serve.
