Ingredients
- 7 burger rolls/buns
- ½ lb. chicken breast
- Salt and pepper to taste
- ½ cup butter
- 2 tablespoons olive oil
- ½ medium-sized onion, diced
- 1 ½ cup tomato sauce
- 1 cup Greek Yoghurt
- 2 cups baby spinach
- 1 ½ cup grated cheddar cheese
- ¼ cup melted butter
- 2 tablespoons freshly chopped parsley
- Salt and pepper to taste
- 1 garlic clove, minced
- Melt the butter and olive oil in a nonstick frying pan and fry up the chicken on both sides for about 7 minutes.
- Season with salt and pepper to taste and stir in the tomato sauce and chopped onions.
- Cut the buns in half and spread the chicken and tomato sauce all over.
- Top with Greek yogurt, baby spinach, and grated cheese.
- In a bowl add the melted butter, chopped parsley, salt and pepper to taste and minced garlic.
- Mix until combined and brush the buns all over.
- Let them bake in the oven for about 15 minutes in a preheated oven at 350 F or 180 C degrees.
- Serve and enjoy.
