Caprese Pasta Salad

Caprese Pasta Salad


  • For the dressing:
  • 5 tablespoons balsamic vinegar
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • 3 teaspoons dijon mustard
  • 2-3 tablespoons olive oil
  • ½ pound cooked pasta - fusilli or any other kind will work fine
  • 3 oz. mozzarella, diced into cubes
  • Salt and pepper to taste
  • 10-12 cherry tomatoes, diced in half
  • 2 garlic cloves, minced
  • ¼ cup chopped red onion
  • ½ cup diced kalamata olives

  1. In a large mixing bowl add the balsamic vinegar, dried oregano, dijon mustard, salt and pepper to taste, and olive oil.
  2. Mix until combined.
  3. In a deep bowl add the cooked pasta. And Stir in the chopped cherry tomatoes, kalamata olives, red onion, mozzarella, and minced garlic.
  4. Stir until combined and pour in the vinaigrette.
  5. Stir again until all the pasta is well coated with the dressing.
  6. Serve in a bowl and enjoy.
