Ingredients
- For the dressing:
- 5 tablespoons balsamic vinegar
- Salt and pepper to taste
- 1 teaspoon dried oregano
- 3 teaspoons dijon mustard
- 2-3 tablespoons olive oil
- ½ pound cooked pasta - fusilli or any other kind will work fine
- 3 oz. mozzarella, diced into cubes
- Salt and pepper to taste
- 10-12 cherry tomatoes, diced in half
- 2 garlic cloves, minced
- ¼ cup chopped red onion
- ½ cup diced kalamata olives
- In a large mixing bowl add the balsamic vinegar, dried oregano, dijon mustard, salt and pepper to taste, and olive oil.
- Mix until combined.
- In a deep bowl add the cooked pasta. And Stir in the chopped cherry tomatoes, kalamata olives, red onion, mozzarella, and minced garlic.
- Stir until combined and pour in the vinaigrette.
- Stir again until all the pasta is well coated with the dressing.
- Serve in a bowl and enjoy.
