Caprese Pesto Pasta


  • 1 pound Jovial Cassava Penne Pasta
  • 1 cup cherry tomatoes, halved
  • 8 ounces mozzarella perline
  • 1 1/4 cup favorite pre-made basil pesto
  • 1/4 cup fresh basil leaves thinly sliced, for tossing with the pasta

  1. Bring a large pot of salted water to a boil. When boiling, add the Jovial Cassava Penne Pasta and cook as per package directions to al dente, approximately 13 minutes. When the pasta is done, reserve 1 cup of the pasta water and drain.
  2. Return the cooked pasta to the pot and add in the pesto sauce, tomatoes, mozzarella, and fresh basil.
  3. Toss to combine. Add a little of the reserved pasta water as needed to loosen the sauce for even coating.
  4. Serve immediately and Enjoy!
