Carrot Cake Bars

Ingredients

Carrot Cake Bars:
  • 3/4 cup avocado oil (or vegetable oil, or any mild-flavored oil)
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 3 eggs
  • 1/2 tablespoon vanilla extract
  • 1 2/3 cups all-purpose flour
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon fine sea salt
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon ground nutmeg
  • Pinch of ground cloves
  • 8 ounces finely-grated* fresh carrots
  • Optional: 1/2 cup chopped nuts or 1/4 cup raisins
Cream Cheese Frosting:
  • 1 (8-ounce) package low-fat cream cheese, softened
  • 2 tablespoons butter, softened
  • 1 teaspoon vanilla extract
  • 3 cups sifted powdered sugar (use more/less to achieve your desired consistency)

  1. To begin with our carrot cake bars we are going to heat our oven at 350º Fahrenheit and prep a baking dish preferably of 9x9 inches with some cooking spray.
  2. Then we are going to gather our wet ingredients and mix them together. Mix well and then add the eggs, and vanilla, keep mixing until we get a smooth and nice mix.
  3. After that mix the dry ingredients in a separate bowl, that will consist of the flour, cinnamon, baking soda, baking powder, salt, nutmeg, and cloves.
  4. Once we have our two mixes of dry and wet ingredients we want to mix them together. Adding the dry with the wet ingredients, until we get a blended mixture. Add the grated carrots and mix. In case of wanting to add extra ingredients like nuts and or raisins, you can add them now as well. Pour your batter into the baking platter and spread it until it's evenly.
  5. Put it into your heated oven and let it bake for 40 minutes. Your cake should start looking nice and golden or you can simply stick a toothpick in it if it comes out clean. Your cake is ready. Take your cake out of the oven and let it cool.
  6. Start working in your frosting. Mix your cream cheese, butter, and vanilla until it's nice and smooth. Add the remaining sugar and mix it until you get the consistency you want.
  7. Spread your frosting and slice your cake. Enjoy it at room temperature with a nice cup of tea or coffee.
