Ingredients

  • For the Carrot Cake:
  • 2 cups all-purpose flour
  • 1 ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 1 cup of vegetable oil
  • 1 tablespoon cinnamon
  • 4 large eggs
  • 2 ½ cup grated carrots
  • 3 oz. soft feta cheese
  • For the Maple Glaze:
  • 7 oz. cream cheese
  • ½ cup powdered sugar
  • 2 tablespoons maple syrup or honey

1. In a large mixing bowl mix the flour, baking powder, sugar, cinnamon, and carrots. 2. Stir in the eggs, vegetable oil, vanilla extract, and mix until combined. 3. Transfer the mixture to a 9-inch springform pan and bake in an already heated oven at 350 F or 180 C degrees for about 40 minutes. 4. Let it cool completely. 5. Meanwhile, mix the cream cheese, powdered sugar, and maple syrup. 6. Top the chilled carrot cake and cut slices. 7. Serve and enjoy.
