Cinnamon Roll Pancakes

Cinnamon Roll Pancakes


For Pancakes: For Cinnamon Swirl:
  • ½ cup flour
  • ½ cup brown sugar
  • 2 teaspoons cinnamon
  • ¼ cup water
For Cream Cheese Glaze:
  • 4 tablespoons butter
  • 2 ounces cream cheese
  • 1 ¼ cups powdered sugar
  • 1 teaspoon vanilla extract

  1. Prepare cinnamon swirl: Mix together all ingredients in a small bowl. The mixture should be thick. Scoop the mixture into a small plastic bag. Snip the very end of the corner when ready to pipe onto the pancake. Set aside until ready.
  2. Prepare Cream Cheese glaze: In a medium glass or microwave-safe bowl, heat the butter and cream cheese until melted. Whisk together until smooth, then whisk in powdered sugar and vanilla. Set aside.
  3. Prepare Pancake Mix: Add all pancake ingredients, including Verb Energy Cinnamon Roll Energy Bars, into the blender and blend until everything is evenly mixed.
  4. Spray a nonstick griddle or large skillet with nonstick spray and heat over medium-low heat.
  5. Pour batter onto a heated griddle or pan into a small circle, about ¼ of a cup.
  6. Starting at the center of the pancake, squeeze the cinnamon filling on top of the pancake batter in a swirl motion, moving to the outside of the pancake.
  7. Cook the pancakes until small bubbles begin to form on top of the pancake and its golden brown on the bottom. Gently but quickly flip it over and cook for an additional 45 seconds to 1 minute, until the other side is lightly golden brown. Place the pancakes on a plate, cinnamon side up!
  8. Top the pancakes with the cream cheese frosting and enjoy!
