Make the syrup by combining water and sugar in a small saucepan. Toss in 3 cinnamon sticks, whole cloves, and allspice berries. Bring to a simmer and then cover. Simmer with the lid on and the flame on low for 5 more minutes. Strain and store in a sealed bottle or container once cooled.
Pour cooled Mayorga Coffee Mayan Blend into a mug over ice.
Splash in the winter spice syrup and spiced rum. Stir with a bar spoon and add a light splash of half and half.
Sprinkle ground cinnamon on top and dip in a cinnamon stick and stir to combine. Use the cinnamon stick to stir and combine the layers of coffee and syrup as you sip. Enjoy!
