Copycat Kind Bars


  • 1 cup crispy rice cereal
  • 1/2 cup roasted cashews, roughly chopped
  • 1/2 cup roasted peanuts, roughly chopped
  • 1/4 cup sunflower seeds, de-shelled
  • 1/2 cup roasted almonds, roughly chopped
  • 1/4 cup oat bran
  • 1/2 cup dried cherries
  • 1/4 cup sesame seeds
  • 1/2 tablespoon cinnamon
  • Pinch of sea salt
  • 2/3 cup honey, heated
  • 4 tablespoons coconut oil, melted
  • 1/2 cup plain Greek yogurt
  • 1/2 cup icing sugar

  1. In a large bowl, add the first 10 ingredients. Stir until fully combined.
  2. Heat honey and coconut oil in the microwave. Pour over nuts and seeds, stirring until everything is fully coated.
  3. Spread out bar mixture onto a parchment-lined baking tray.
  4. In a small bowl, whisk together Greek yogurt and icing sugar until smooth. Scoop into a ziplock bag with the tip cut off and drizzle over bars.
  5. Refrigerate until hard. Cut into bar shapes and enjoy!
