Crispy Cauliflower Tacos

Ingredients

  • ½ head of cauliflower
  • 1 egg, beaten
  • 3 tablespoons milk
  • ½ cup panko bread crumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • ½ cup kale
  • 2 tablespoons sliced red cabbage
  • 4-5 red onions slices
  • 1 tablespoon sriracha mayo
  • 4 corn tortillas
  • Jalapenos to garnish

  1. Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
  2. In a bowl, beat together egg and milk and coat cauliflower in mixture.
  3. In another bowl mix together panko crumbs, garlic powder, salt and pepper. Coat cauliflower.
  4. Place on the pre-lined baking sheet and bake for 30 minutes flipping over after 15 minutes or until golden brown.
  5. Begin to layer. Place down tortillas, then kale, golden cauliflower, cabbage, jalapeno, onions and drizzle with sriracha mayo.
