Date & Walnut Gingerbread Loaf

Date & Walnut Gingerbread Loaf


  • 110 gm Baking Margarine or Unsalted Butter
  • 175 gm Golden Syrup
  • 50 gm Black Treacle
  • 150 ml Milk
  • 2 large eggs, beaten
  • 225 gm plain flour
  • 1 teaspoon mixed spice
  • 2 teaspoons ground ginger
  • 1 teaspoon bicarbonate of soda
  • 110 gm stoned dates
  • 50 gm walnuts (chopped)

  1. Preheat oven to 300 degrees.
  2. Grease loaf pan and line with parchment paper.
  3. In a small bowl, add dates, boiling water and baking soda. Set aside.
  4. In a large mixing bowl, add flour, salt, baking powder, ginger, cinnamon and cloves. Whisk well.
  5. In a large mixing bowl, add banana, vegetable oil, brown sugar, molasses and vanilla. Whisk well.
  6. Add date mixture to wet mixture and whisk well.
  7. Add dry ingredients into wet mixture. Alternate adding dry to wet with whisking well.
  8. Once all ingredients are combined, add chopped walnuts and whisk.
  9. Add batter to loaf pan and bake for 60 minutes or until toothpick comes out clean.
  10. Let cool for 10 minutes, serve and enjoy!
