- 1 Baquette
- 1 tablespoon Olive Oil
- 5 Tomatoes
- ¼ cup of cashew cheese or mozarella
- 1 tablespoon balsamico
- 2 garlic gloves minced
- ¼ cup basil, chopped
- Salt and pepper
- Balsamico glaze
Instructions

- Slice baguette, brush it with olive oil and put it into a sandwich toaster, or if not available bake it for 2 -3 minutes.
- In a medium-sized bowl, mix tomatoes, garlic, cashew cheese, balsamico, basil, salt and pepper.
- Top the bread with the mixture and pour the balsamico glaze over it.
