Easiest Vegan Bruschette


  • 1 Baquette
  • 1 tablespoon Olive Oil
  • 5 Tomatoes
  • ¼ cup of cashew cheese or mozarella
  • 1 tablespoon balsamico
  • 2 garlic gloves minced
  • ¼ cup basil, chopped
  • Salt and pepper
  • Balsamico glaze

  1. Slice baguette, brush it with olive oil and put it into a sandwich toaster, or if not available bake it for 2 -3 minutes. 
  2. In a medium-sized bowl, mix tomatoes, garlic, cashew cheese, balsamico, basil, salt and pepper.
  3. Top the bread with the mixture and pour the balsamico glaze over it.
