English Muffin Meatball Cups

English Muffin Meatball Cups


  • 6 english muffins
  • 1 cup ground beef
  • 1 egg
  • ½ cup bread crumbs
  • ¼ cup parmesan
  • 1 tablespoon Italian seasoning
  • 1 tablespoon salt
  • 1 cup tomato sauce
  • 1 cup cheese
  • Parsley for garnish

  1. Preheat the oven to 375 degrees.
  2. In a large bowl, combine the ground beef, egg, bread crumb, cheese, Italian seasoning and salt. Once thoroughly mixed, form into 6 large meatballs, set aside.
  3. In a 6 well muffin tin, layer 1 english muffin, overlapping each half of the the muffin to fill the whole muffin, making a cup shape.
  4. Place some red sauce in the top of each english muffin “cup”.
  5. Next, top teach english muffin with a meatball and sprinkle over some cheese. Repeat this process until all of the muffins are filled.
  6. Bake for 25- 30 minutes, until the meatball is cooked through and the cheese has melted.
  7. Garnish with fresh parsley and enjoy!
