Breakfast Stuffed Peppers

  • 3 bell peppers
  • Olive oil
  • Salt and pepper, to taste
  • 1/2 pound breakfast sausage
  • 6 eggs
  • 1 cup shredded cheddar cheese, more if desired
  • Sliced avocados, for serving
  • Sliced green onions, for serving

Breakfast Stuffed Peppers are pretty darn good, you guys!
  1. Preheat oven to 350 degrees Fahrenheit.
  2. Cut bell peppers in half and remove seeds. Place pepper halves on a baking sheet. Drizzle with olive oil and season with salt and pepper. Bake for 20 minutes.
  3. While peppers bake, brown breakfast sausage. Drain and set aside.
  4. Once peppers are ready, evenly divide breakfast sausage between them. Crack one egg into each pepper half and top with cheddar cheese.
  5. Bake for 20 minutes, or until the eggs reach your preferred doneness.
  6. Remove from oven, garnish with sliced avocados and green onions, serve and enjoy!
