  • 3 cups shredded roasted chicken
  • 1/2 cup buffalo sauce
  • 4 potatoes, peeled and diced
  • 1/2 cup cream cheese, softened
  • 3 cups Mexican blend cheese
  • 1/2 teaspoon garlic powder
  • 1/2 cup milk
  • 1/2 cup ranch dressing
  • 1 stick butter, melted
  • Salt and pepper, to taste

Try this Buffalo Chicken Potato Casserole for dinner tonight! It's super good and super


1) Boil potatoes until softened. Drain and set aside.

2) Preheat oven to 400 degrees Fahrenheit. Grease a baking dish or oven safe skillet.

3) In a bowl, mix together chicken and buffalo sauce.

4) In another bowl, mix together boiled potatoes, cream cheese, Mexican cheese, garlic powder, milk, ranch dressing, butter, salt and pepper.

5) Add chicken to potatoes and mix until combined.

6) Pour mixture into greased baking dish. Top with cheddar cheese.

7) Bake for 15 minutes, or until cheese is full melted and golden. Remove from oven and cool for 5 minutes.

8) Garnish with sliced green onions, serve and enjoy!
