Cauliflower Al Pastor Tacos

Ingredients

  • 2 cloves garlic, minced
  • 1/2 lime, juiced
  • 2 teaspoons paprika
  • 2 adobo peppers
  • 1/2 cup pineapple juice
  • 1 1/2 cups pineapple chunks
  • 1/4 cup white vinegar
  • 2 tablespoons olive oil
  • 1 head cauliflower, chopped
  • Salt and pepper, to taste
  • 1/2 cup fresh cilantro, chopped, plus more for serving
  • Flour soft taco tortillas
  • Diced onions, for serving
  • Lime wedges, for serving

Try these Cauliflower Al Pastor Tacos for Meatless Monday, or any time of the week. They are so good!
  1. To a food processor or blender add minced garlic, lime juice, paprika, adobo peppers, pineapple juice, 1/2 cup pineapple chunks and white vinegar. Blend until completely smooth.
  2. Heat olive oil in a large skillet over medium-high heat. Add cauliflower and season with salt and pepper. Cook until cauliflowers are tender and have started to brown, about 10 minutes.
  3. Pour sauce over cauliflowers, add remaining 1 cup pineapple chunks and stir to combine. Reduce heat and simmer for 5 minutes. Stir in 1/2 cup chopped cilantro.
  4. Remove cauliflower from heat and build your tacos! Divide cauliflower among the tortillas, top with diced onion, more cilantro and lime juice. Serve and enjoy!
