Chili Chicken Baked Tacos

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1/4 cup green bell pepper, diced
  • 2 chili peppers, deseeded and diced
  • 1 pound ground chicken
  • 1 1/2 tablespoons taco seasoning
  • 3 tablespoons tomato paste
  • 14 ounces kidney beans
  • 8 ounces sweet corn
  • 10 tortilla shells
  • Mexican cheese blend, shredded
  • Sour cream and fresh cilantro, for garnish

These spicy and delicious Chili Chicken Baked Tacos are a totally easy dinner to make any night of the week.
  1. Preheat oven to 400 degrees Fahrenheit.
  2. Heat olive oil in a skillet over medium-high heat. Add onions, green peppers and chili peppers. Cook until tender, about 5 minutes.
  3. Add ground chicken, taco seasoning and tomato paste. Stir to combine and cook until chicken is mostly cooked through about 8 minutes.
  4. Add kidney beans and sweet corn. Stir to combine.
  5. Evenly distribute chicken among the tortilla shells. Cover each taco with shredded cheese.
  6. Place tacos in an oven-safe dish and bake for 10 to 15 minutes, or until cheese is fully melted and bubbly.
  7. Garnish with sour cream and chopped cilantro if desired, serve and enjoy!
