Ingredients
- FOR THE CHICKEN
- 1/4 cup lime juice
- 2 teaspoons olive oil
- 1 clove garlic, chopped
- 1/2 cup chopped fresh cilantro
- Salt and pepper, to taste
- 1 1/2 pounds boneless, skinless chicken breasts
- FOR THE AVOCADO SALSA
- 2 - 4 avocados, diced
- 2/3 cup sliced cherry tomatoes
Instructions
1) In a small bowl, combine lime juice, olive oil, garlic, cilantro, salt and pepper.
2) Place the chicken in a large plastic bag. Add the marinade. Let the chicken marinate for at least 20 minutes.
3) Preheat a grill pan over medium-high heat. Place the chicken on the pan and cook for 5 to 6 minutes per side, or until chicken is cooked all the way through. Once cooked, remove the chicken from the pan and set aside.
4) To make the avocado salsa, add all of the ingredients to a large bowl. Toss gently to mix.
5) Top cilantro lime chicken with fresh avocado salsa.
