Ingredients
- For The Muffins:
- 2 eggs
- 1/2 cup canola or vegetable oil
- 1/2 cup brewed coffee
- 3/4 cup milk
- 1 1/2 cups all-purpose flour
- 1/2 cup packed light brown sugar
- 1 teaspoon cinnamon
- 1/3 teaspoon baking powder
- 1/4 teaspoon salt
- For The Crumb Topping:
- 1/3 cup sugar
- 1/2 cup packed brown sugar
- Pinch of salt
- 1/2 cup butter, melted
- 1 teaspoon cinnamon
- 1 1/2 cups all-purpose flour
- For The Glaze:
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract

- Preheat oven to 375 degrees Fahrenheit. Line a muffin tin with cupcake liners and set aside.
- First, make the cupcake batter. In a bowl, whisk together eggs, oil, coffee and milk. In a separate bowl, mix together flour, brown sugar, cinnamon, baking powder and salt. Add wet to dry and mix until fully combined. Evenly scoop batter into muffin tin.
- To make the crumb topping, mix together all ingredients until combined. Break pieces apart and press into the top of the cupcake batter.
- Bake for 15 minutes, or until a toothpick comes out clean when inserted in the center.
- While muffins bake, make the glaze. In a small bowl whisk together glaze ingredients until smooth. If it's too thin, add more powdered sugar. Too thick, add more milk.
- Remove baked cupcakes from the oven and allow it to cool for 5 minutes. Remove from tray, drizzle with glaze, serve and enjoy!
