Ingredients
- 1/2 cup butter, softened
- 1/4 cup cream cheese, softened
- 1 cup sugar
- 1 egg
- 1/2 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour, divided
- 1 teaspoon baking soda
- 2 teaspoons cornstarch
- 1/4 teaspoon salt
- 2 tablespoons lemon zest
Instructions
1) Combine butter and and cream cheese in a bowl and beat for 1 minute. Add sugar, egg and vanilla extract, beating until light and fluffy.
2) Beat in 1 1/4 cups flour, followed by baking soda, cornstarch, salt, lemon zest and lemon juice.
3) Beat in remaining flour until dough starts to form like a ball. Cover and refrigerate dough for at least 2 to 3 hours, or overnight.
4) Preheat oven to 350 degrees Fahrenheit. Grease a baking sheet with cooking spray.
5) Scoop about 1 1/2 tablespoons of cookie dough and form into a ball. Place on baking sheet.
6) Bake cookies for 8 to 10 minutes. Remove from oven and while cookies are still hot, lightly press down. Cool cookies completely.
7) While cookies cool, make the glaze. Whisk together powdered sugar and milk or water until desired consistency is reached. Drizzle glaze over cookies and allow to harden.
8) Serve and enjoy!
