Ingredients
- 2 medium courgette or zucchini
- 4 slices ham
- 4 slices Monterey Jack cheese||4 slices Monterey Jack cheese
- Ground black pepper
Instructions
1. Trim ends of courgette or zucchini. Using a vegetable peeler, slice it lengthwise into 16 paper-thin slices; place in a single layer on a work surface. Discard first slice of peel and seedy center.
2. Stack ham slices and cut into 4 long strips. Repeat with cheese slices.
3. Sprinkle slices with pepper. Lay a ham strip in center of a courgette or zucchini slice and top with a cheese strip. Starting at one end of strip, roll it into a tight spiral; secure with a toothpick.
