Healthy Open Rye Sandwiches

Healthy Open Rye Sandwiches


  • 3 slices of rye bread
  • 1/2 avocado
  • 1 tsp lime juice
  • 1/2 tsp chilli flakes
  • 1 cucumber
  • 1 tbsp green pesto
  • 1 boiled egg
  • 4-5 cherry tomatoes
  • Olive oil
  • 1 crushed garlic
  • Few leaves fresh basil

  1. Avocado, Lime & Cucumber Mash the avocado and spread it onto one slice of rye bread. Squeeze some lime juice on top and then add a few thin slices of cucumber.
  2. Pesto & Boiled Egg with Chilli Sauce Spread a teaspoon of pesto onto one slice of rye bread. Add a sliced boiled egg and then sprinkle on some chilli flakes.
  3. Tomato, Garlic & Basil Chop in cherry tomatoes in half and add them to a bowl. Stir in crushed garlic, some torn basil leaves and a little olive oil and stir then add to the rye bread.
  4. Season all three with salt and pepper.
