Ingredients
For Salad:
- 1 medium honeydew melon, cubed (or use a melon baller)
- 1 cup blackberries
- 1 head bibb lettuce leaves
- ½ a shallot, thinly sliced
- ½ cup fresh mint leaves, torn
Poppy Seed Dressing:
- 2 tbsp PARTANNA EXTRA VIRGIN OLIVE OIL
- 2 tbsp lemon juice freshly squeezed
- 2 tsp honey
- 1/2 tsp poppy seeds
- Sea salt and pepper to taste
Instructions
- Slice the honeydew melon in half and remove seeds. Remove rind and chop into bite-sized pieces. Arrange on a platter over bibb lettuce with blackberries and shallot. Garnish with mint leaves.
- Make Dressing: Whisk dressing ingredients together and drizzle on salad just before serving.
