Ingredients

For Cookies:
  • 2 cups flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup unsalted butter
  • 3/4 cup Granulated Sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 teaspoon fresh key lime zest
For Icing:
  • 1 cup Powdered Sugar
  • 1 tablespoon fresh key lime juice
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon milk
  • 1 teaspoon fresh key lime zest
  • Crushed graham cracker crumbs, optional topping

Soft like clouds that melt in your mouth, these key lime cookies are just a dream dessert. A nice flavor of lime zest and some lime icing, these are a refreshing dessert that you should definitely get your hands on.

These meltaway cookies which are made with a buttery shortbread cookie base, and are known not only for their delicious flavor and texture but because they simply melt in your mouth. Anyone who loves shortbread cookies, they are easy to make and work perfectly in the summer.

Just with few ingredients, these shortbread cookies are easy and quick to make, have a nice and rich lemon flavor and you will want to finish them in one sitting. For our cookie dough, we are using all-purpose flour, baking powder, salt, unsalted butter, granulated sugar, eggs, vanilla extract, and lime zest. For the icing, we are using powdered sugar, milk, vanilla extract, lime juice, and lime zest with some crushed graham crumbs.

You can use key limes or limes in this recipe whichever is easier to get at the store, or even another citrus like oranges and lemon even tangerine, any of them can work with it and still give you a nice and citrus dessert. 

  1. Starting warming the oven at 375º degrees Fahrenheit and placing parchment paper in our sheet.
  2. Then we are mixing all our dry ingredients, flour, baking powder, salt, and sugar. In another bowl, we want to mix our sugar and butter until it is light and smooth.
  3. After we get the butter mix, we add the egg, vanilla extract and lime zest, mix until combined, once that’s done we want to add our dry ingredients and combine it with our wet ones, mix until you get a nice looking cookie dough.
  4. We want to start forming our cookie shapes, for it with a spoon we can pick the batter and make small circles on our parchment paper, gently press them with your hands or a cup, into a circle shape.
  5. Place them in the oven and let them bake for 8 to 10 minutes, they will look light and white, they won’t necessarily get golden, so remove them from the oven once the timer is off.
  6. Let them cool for a couple of minutes and then prepare your icing. Use a spoon to spread your icing, and dust some crushed crackers for garnishing. Wait for the icing to harden before eating.

These cookies are so easy to make and so nice and soft, make sure they don’t overbake as it will result in really hard and crunchy cookies and not the nice and melty texture that they should have. So remove them looking light and white, avoid brown edges, as this will be a sign of overcooked cookies.

Preferably to consume the same day, as they won’t have the same melty consistency if you freeze them. These are refreshing, quick to make, and perfect for the summer days. These lime cookies are like a taste of heaven in your mouth. Enjoy!
