Mushroom Tom Yum Noodle Soup

Mushroom Tom Yum Noodle Soup


  • 1 bag Popadelics Twisted Thai Chili
  • 1 cup shiitake mushrooms, sliced
  • 1 cup enoki mushrooms
  • 1 cup cherry tomatoes, sliced in half
  • 1 Thai red chili, thinly sliced
  • 3-4 kaffir lime leaves
  • 1 inch piece of galangal
  • 1 lemongrass stalk
  • 3 tablespoons lime juice
  • ¼ cup fresh cilantro
  • 2 tablespoons soy sauce
  • ½ teaspoon chili flakes
  • 1 teaspoon brown sugar
  • 6 cups vegetable stock
  • ½ tablespoon vegetable oil
  • Thai red chili, sliced for garnish
  • Lime wedges, for garnish
  • Cilantro, for garnish

  1. Heat oil in a pot and add chili flakes. Saute for a few seconds and then add vegetable stock.
  2. Crush the lemongrass stalk, galangal, and kaffir lime leaves. Add them to the pot and cover it. Cook for 10-15 minutes on medium heat.
  3. Remove the lemongrass, galangal, and kaffir lime leaves from the stock and discard.
  4. Add mushrooms, soy sauce, and sugar. Mix and cover the pan. Cook for another 10 minutes.
  5. Add cherry tomatoes and cook for just 1-2 minutes. Don't overcook the tomatoes.
  6. Finally, add lime juice.
  7. Top with Popadelics Twisted Thai Chili.
  8. Garnish with cilantro, thai chili, lime wedges.
