Ingredients
- 1/2 teaspoon garlic powder
- 1/2 cup onions, diced
- 1 can spicy or regular tomatoes in sauce
- 1 cup cheddar cheese, shredded
- 1 can spicy enchilada sauce
- 1 can black beans, drained
- 1 cup chicken, cooked
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon salt
- 1 1/2 cups uncooked rice
- 2 cloves garlic, minced
- Sour cream, chopped cilantro and salsa, for garnish

- In a pot over medium-high heat, cook onions and garlic until softened.
- Add tomatoes with the sauce, enchilada sauce, paprika, salt, cumin, and garlic powder. Stir to combine.
- Add uncooked rice, cover, and simmer for 20 minutes or so rice is cook.
- When rice is cooked, add 1/2 cup of cheese, black beans, chicken, and the remaining cheese. Cover and simmer until cheese melts.
- Stir to combine, serve One Pot Spicy Rice with garnish and enjoy!
