One Pot Spicy Rice

One Pot Spicy Rice

Ingredients

  • 1/2 teaspoon garlic powder
  • 1/2 cup onions, diced
  • 1 can spicy or regular tomatoes in sauce
  • 1 cup cheddar cheese, shredded
  • 1 can spicy enchilada sauce
  • 1 can black beans, drained
  • 1 cup chicken, cooked
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 1/2 cups uncooked rice
  • 2 cloves garlic, minced
  • Sour cream, chopped cilantro and salsa, for garnish

  1. In a pot over medium-high heat, cook onions and garlic until softened.
  2. Add tomatoes with the sauce, enchilada sauce, paprika, salt, cumin, and garlic powder. Stir to combine.
  3. Add uncooked rice, cover, and simmer for 20 minutes or so rice is cook.
  4. When rice is cooked, add 1/2 cup of cheese, black beans, chicken, and the remaining cheese. Cover and simmer until cheese melts.
  5. Stir to combine, serve One Pot Spicy Rice with garnish and enjoy!
