Orange Marmalade Cake


  • 1 ½ cups flour
  • 2 teaspoons baking powder
  • 1 cup sugar
  • 3 eggs
  • 1 cup Greek yogurt
  • Zest of 1 orange
  • 1/2 teaspoon vanilla extract
  • 1/2 cup vegetable oil
  • 5 tablespoons The Jam Stand Orange Marmalade, melted with 1 tablespoon water, plus extra to serve

  1. Preheat oven to 325°. Grease and line a loaf pan.
  2. Sift the flour and baking powder into the bowl of an electric mixer. Add all the remaining ingredients, except for the The Jam Stand Orange Marmalade, and beat on high speed for 1-2 minutes or until combined. Pour the mixture into the prepared pan and bake for 45 minutes or until a skewer inserted into the center comes out clean. Remove from the oven and cool slightly in the pan, then turn out onto a rack over a tray. Make holes in the cake with a skewer, then pour over the warm marmalade. Serve slices spread with extra marmalade and enjoy!
