Peach Salsa

Peach Salsa

Ingredients

  • 1 ½ cup cherry tomatoes, quartered
  • 1 red bell pepper, 4 oz, seeded and finely diced
  • 2 jalapenos, seeded and finely diced
  • 1 small red onion, finely diced
  • 1 can Pacific Produce Orchard Natural Sliced Peaches, drained and large diced
  • 1/2 bunch cilantro, chopped
  • 2 tablespoons lime juice
  • 1 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon freshly ground black pepper or to taste

  1. Add first 6 ingredients to a large bowl, including Pacific Produce Orchard Natural Sliced Peaches and toss.
  2. Dress with 2 Tbsp lime juice, 1 1/2 tsp salt and 1/4 tsp pepper. Fold everything together until well mixed. Add more salt and pepper to taste if desired. Refrigerate for 30 minutes to allow flavors to meld together.
  3. Serve with tortilla chips or with grilled chicken or shrimp.
