Pepperoni Jalapeno & Cheddar Cornbread Muffins

Pepperoni Jalapeno & Cheddar Cornbread Muffins


  • 1 cup cornmeal
  • 1 cup flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • ½ teaspoon Salt
  • 1 cup milk
  • 1 egg, beaten
  • 4 tablespoons melted unsalted butter
  • 1 cup shredded cheddar cheese
  • ½ cup pepperonis
  • 1 jalapeno pepper, sliced thin

  1. Preheat the oven to 400ºF.
  2. In a bowl whisk together the cornmeal, flour, sugar, baking powder and salt. Then mix in the milk, egg, melted butter, shredded cheddar cheese, pepperoni and thinly sliced jalapeños. Fold together well until combined.
  3. Grease a muffin tray and then spoon in the batter about ¾ full. Press a few more pepperoni’s and sliced jalapeños into the top then place into the oven to bake for 17-20 minutes until the middle is clean when you poke it with a knife.
  4. Serve with a side of butter or hot sauce, if you’re a spicy boi.
  Notes: This recipe makes 6 good sized muffins.
