Ramen Trail Mix

Ingredients

  • 3 package dry instant ramen, seasoning packet discarded
  • 1/2 cup butter, melted
  • 1/3 cup honey
  • 1/4 cup dark brown sugar
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • ½ cup shredded sweetened coconut
  • ½ cup almonds
  • ½ cup pecans
  • ½ cup roasted peanuts
  • ½ cup M&Ms
  • ⅓ cup chocolate covered cranberries
  • ⅓ cup butterscotch or white chocolate chips

  1. Preheat the oven to 350 degrees F. then line a large cookie sheet with parchment paper, set aside.
  2. In a large bowl, combine the melted butter, brown sugar and honey.
  3. Add all of the ingredients to the melted butter mixture, except for the M&Ms, chocolate covered cranberries and butterscotch or white chocolate chips. Stir until everything is evenly coated.
  4. Transfer the mixture to the prepared cookie sheet and bake for 25-30 minutes, until golden brown and crisp
  5. Remove from the oven and allow to cool slightly before breaking onto large chunks. Once the snack mix has been broke up allow to cool completely.
  6. Once cool, fold in the M&Ms, chocolate covered cranberries and butterscotch or white chocolate chips.
  7. To serve, transfer to a large bowl and dig in!
