Ingredients

  • 3 cups medium pasta
  • ¼ cup white onion
  • 1 cup sauerkraut
  • ½ cup dill pickles
  • 1 cup corned beef
  • 1 cup swiss cheese
  • Dressing:
  • ⅔ cup mayonnaise
  • ⅓ cup sour cream
  • ⅓ cup thousand island dressings
  • 1 ½ Tbsp dijon mustard
  • 3 Tbsp sauerkraut brine
  • 1 ½ tsp caraway seeds
  • salt and pepper to taste

  1. Cook pasta according to package directions. Drain and run under cold water.
  2. Combine all dressing ingredients in a small bowl.
  3. Toss all ingredients with dressing. Refrigerate 1 hour before serving.
  4. Drizzle with extra thousand island/russian dressing before serving if desired.
