Rustic Bacon Beef Stew

Ingredients

  • 1/4 cup beer of choice
  • 1/4 cup flour
  • 1 tablespoon dried thyme
  • 1 onion, diced
  • 1 1/2 cups bacon, chopped
  • 1 1/2 pounds potatoes, quartered
  • 2 pounds beef stew meat
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • 3 cloves garlic, sliced
  • 4 cups beef broth
  • 4 carrots, halved and sliced
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a large pot over medium heat, crisp bacon. Remove from pot and set aside.
  3. Add beef to pot, season with salt and pepper, and cook for 4 to 5 minutes on each side, or until the meat is browned. Remove from pot and set aside.
  4. Add onions and garlic. Stir and cook for 5 minutes. Add beef back to pot and stir to combine.
  5. Add tomato paste, flour, beer, and broth. Stir. Add dried thyme and bay leaves. Stir again to combine.
  6. Remove from heat and bake in the oven for 2 hours.
  7. Remove from oven, add carrots, potatoes, and bacon (reserve some bacon for garnish). Stir. Place back in the oven and bake for an hour.
  8. Remove from oven, garnish with parsley and bacon, serve Rustic Bacon Beef Stew and enjoy!
