  • 1 pound boneless, skinless chicken breasts
  • 1/2 small onion, minced
  • 2 carrots, minced
  • 2 celery stalks, minced
  • 3/4 cup wild rice (white rice blend)
  • 2 garlic cloves, minced
  • 2 tablespoons butter
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried sage
  • 1/4 teaspoon dried rosemary
  • 1/2 teaspoon pepper
  • 1/2 teaspoons salt
  • 2 bay leaves
  • 6 cups chicken broth

  1. Firstly, Add all ingredients into a 6-quart slow cooker.
  2. Cover and cook on low for 4 hours. Chicken should be cooked through.
  3. Remove chicken from soup, shred and stir back into the soup. If rice is not yet cooked, refrigerate the shredded chicken, cover soup and continue cooking until rice is tender. When rice is ready, stir chicken back into the crockpot, cover, and warm for 5 minutes.
