Ingredients
- 1 tablespoon olive oil
- 1/2 cup celery, diced
- 1/2 red onion, diced
- 1 teaspoon garlic, minced
- 1 pound ground turkey (dark meat)
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon celery salt
- 1 pack ranch mix
- Salt and pepper to taste
- 1 can white beans
- 1 can corn
- 1 can chopped tomatoes
- 3 cups chicken broth
- Cream cheese
- Crumbled blue cheese
- Chopped cilantro
Instructions
With winter on its way, we can all agree that nothing is easier than throwing a bunch of stuff into a slow cooker and letting it make you something warm and delicious. Give this Slow Cooker Chicken Chili a try! It's not super spicy (unless you want it to be!) and it's easy and tasty. Feel free to mix it up with stuff you like!
- Add oil and sauté celery, onions, and garlic until soft in a skillet over medium heat. Add chicken and turkey. Mix until fully cooked.
- Remove chicken and turkey from heat and pour into a medium-sized slow cooker. Add onion powder, garlic powder, celery salt, ranch mix, salt, pepper, white beans, corn, tomatoes, and chicken broth. Stir together.
- Cook chili on high for 3 to 6 hours.
- When ready to serve, stir in two tablespoons of cream cheese and sprinkle crumbled blue cheese and cilantro on top. Add hot sauce for a spicier finish.
