Smothered Pork Chops


For Pork Chops:
  • 1 pound bone-in pork chops
  • 1/2 tablespoon onion powder
  • 1/2 tablespoon garlic powder
  • 1/2 teaspoon cayenne
  • 1 teaspoon seasoning salt
  • 1/2 teaspoon fresh cracked black pepper
  • 2 teaspoons olive oil
  • 1/2 cup all-purpose flour
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
For Gravy:
  • 1 tablespoon unsalted butter 
  • 1 large onion, thinly sliced
  • Pinch of salt
  • 4 cloves garlic, minced
  • 1 teaspoon fresh chopped thyme
  • 1/2 cup chicken broth, divided
  • 3/4 cup buttermilk or heavy cream
  • Chopped fresh flat-leaf parsley, for garnish

This classy dish consists of crispy pork chops coated in creamy onion gravy and can be served with white rice or mashed potatoes. For Pork Chops:
  1. Use paper towels to rub the pork chops dry. Place pork chops in a medium pan.
  2. Add olive oil, seasoning salt, cayenne, garlic powder, and pepper onion powder. Dip each pork chop in the flour and shake to remove excess flour.
  3. After that, set another pan on medium heat. Add 2 tablespoons each of olive oil and butter.
  4. Wait a few seconds till hot and then fry both sides of the pork chops in a single layer until they turn golden brown. Withdraw pork chops from the pan. Leave to get warm.
For Gravy:
  1. Place 1 tablespoon of butter in the same pan and heat over medium heat. Finely slice the onions and throw them in. Add salt to taste.
  2. Cook and make sure to stir once or twice until soft and caramelized. Should the pan run dry, add 1 tablespoon of chicken broth.
  3. Add the thyme and garlic and cook for about 30 seconds. Measure 2 tablespoons from the flour left and add to the pan. Mix with the onions. Cook for a few minutes until incorporated.
  4. Add the chicken broth and scrape the pan bottom to remove browned bits. Wait for the liquid to get thick and the volume is reduced. Add the buttermilk or cream. Leave for a couple of minutes and watch it get thick and creamy.
  5. Put the pork chops back into the pan and coat them with the sauce. Simmer until the pork is well cooked. This should take about 5 minutes but leave for longer to achieve the desired texture.
  6. While coating the sauce on the pork, it will get thicker. Add some broth or cream to reduce thickness, if necessary. Finally, taste the dish and add seasoning if necessary. Add chopped parsley for garnish and serve while hot or warm.
