Sweet Potato Chili


  • 2 teaspoons avocado oil
  • 1 red pepper, seeded and diced
  • 1 green pepper, seeded and diced
  • 2 celery stalks, diced
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 sweet potatoes, peeled and cubed
  • 1-15 oz. can kidney beans, rinsed and drained
  • 1-15 oz. can black beans, rinsed and drained
  • 1 cup vegetable broth or water
  • 1 tablespoons chili powder
  • 1 teaspoon fine sea salt, more to taste
  • 2 teaspoons paprika
  • 1/8 teaspoon cayenne pepper
  • 1 teaspoon ground cumin
  • 1/2 teaspoon celery seed
  • 1/4 teaspoon ground cinnamon
  • 1 15 oz. can tomato sauce
  • 1 15 oz. can diced tomatoes

Sweet potato chili, a vegetarian chili recipe, is healthy comfort food. It is easy to prepare and satisfies well. Apart from it being a vegan recipe, it has become to be loved by every palate, whether a vegan or a non-vegan. Sweet potato chili is perfect for dinner or an excellent weekly meal. It also suffices for a large and friendly gathering.

Our options for preparing this delicious recipe is either using a slow cooker or using a pressure cooker. Use a pressure cooker if you want it on time and the former when if you won’t be around all through the cooking. i.e., prepare in the morning and have it ready in the evening. You can also use a stovetop.

The sweet potato chili essential ingredients are sweet potatoes, beans, and diced tomatoes. You can top it with any toppings of your choice. Although for our toppings, we prefer to use our favorite, i.e., scallions, diced onions, cilantro, guacamole, shredded lettuce, tortilla chips, sour cream, and cheese. Sweet potato chili is gluten-free, and the total time for its preparation is 1 hour in an instant pot pressure cooker.

The ingredients to use are the following: diced red pepper, diced onion, clove garlic (minced), sweet potatoes (peeled and cubed), vegetable broth, chili powder, salt, cayenne pepper, paprika, tomato sauce, diced tomatoes, ground cinnamon, diced celery stalks, celery seed, ground cumin, avocado oil, kidney, and black beans. 

  1. In an instant pot, using the sauté function, heat the oil. Add the peppers, celery, onion, and minced garlic and cook. Please make sure you occasionally stir until it is very softened.
  2. Add the sweet potatoes, beans, vegetable broth, all other spices and stir together to mix well. Add the tomato sauce and diced tomatoes on top, but they shouldn’t be stirred.
  3. Cover and put the steam valve to sealing. Let it cook on manual high pressure for 7 minutes. Allow the pressure to release and release any remaining pressure.
  4. Adjust the seasoning to taste and stir together. Do serve with your desired garnishes.
  5. If you are using a slow cooker, place all the ingredients in the cooker, and cook on high for six hours and low for seven hours.
  6. Adjust seasoning to taste and serve it with your desired garnishes. One can’t wrong with the taste and aroma of the sweet potato chill. Enjoy!
