Ingredients
- 1 head romaine lettuce
- 1 bunch purple kale
- 1 cup shredded carrots
- 1 cup shredded red cabbage
- 1 cup sliced red bell peppers
- Fresh mint for garnish
- Fresh cilantro for garnish
- 1 mango , ½ ed
- ½ cup peanuts, Chopped
- ---For Dressing---
- 1/2 cup creamy peanut butter
- 2 tablespoons fresh lime juice
- 2 tablespoons rice vinegar
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon honey
- 1 teaspoon toasted sesame oil
- 1 teaspoon sriracha
- 1/4 teaspoon ground ginger
- 1 clove garlic roughly chopped
- 1–2 tablespoons coconut milk, if needed
Instructions
- In a bowl combine all dressing ingredients listed above and whisk well till combined. If the dressing is too thick add in a few tablespoons of coconut milk.
- Rinse and prepare produce for salad. Begin to build in a bowl. Drizzle thai peanut dressing and top with chopped peanuts for an extra crunch!
