Ingredients
- Lemon Vinaigrette:
- Juice of 1 lemon
- 2 tablespoons red wine vinegar
- 2 minced cloves garlic
- 1 minced white onion
- 1⁄2 cup (120 ml) olive oil
- Salt and black pepper to taste
- Salad:
- 1 head radicchio, sliced
- 1⁄2 small red onion, thinly sliced
- 8 large romaine lettuce leaves, sliced
- 2 diced medium tomatoes
- 4 ounces (115 g) Genoa salami, cut into small pieces
- 1 (15-ounce/430 g) can red or black beans, rinsed and drained
- 8 ounces (225 g) fresh pearl mozzarella
- Lemon Vinaigrette
- 1 yellow bell pepper, chopped
- Salt and black pepper to taste
Instructions
- Add all the ingredients for the vinaigrette to a small bowl and whisk to combine. Season with salt and pepper as needed Chop.
- In a large bowl, combine lettuce, radicchio, red onion, tomatoes, beans, mozzarella, salami, and yellow pepper. Season with salt and black pepper to taste and toss together well.
- Drizzle ¾ of the vinaigrette over the salad and toss again to coat all the ingredients in the oil. Taste and add more vinaigrette as needed, plus salt and pepper. Serve.
