Ingredients

  • Lemon Vinaigrette:
  • Juice of 1 lemon
  • 2 tablespoons red wine vinegar
  • 2 minced cloves garlic
  • 1 minced white onion
  • 1⁄2 cup (120 ml) olive oil
  • Salt and black pepper to taste
  • Salad:
  • 1 head radicchio, sliced
  • 1⁄2 small red onion, thinly sliced
  • 8 large romaine lettuce leaves, sliced
  • 2 diced medium tomatoes
  • 4 ounces (115 g) Genoa salami, cut into small pieces
  • 1 (15-ounce/430 g) can red or black beans, rinsed and drained
  • 8 ounces (225 g) fresh pearl mozzarella
  • Lemon Vinaigrette
  • 1 yellow bell pepper, chopped
  • Salt and black pepper to taste

  1. Add all the ingredients for the vinaigrette to a small bowl and whisk to combine. Season with salt and pepper as needed Chop.
  2. In a large bowl, combine lettuce, radicchio, red onion, tomatoes, beans, mozzarella, salami, and yellow pepper. Season with salt and black pepper to taste and toss together well.
  3. Drizzle ¾ of the vinaigrette over the salad and toss again to coat all the ingredients in the oil. Taste and add more vinaigrette as needed, plus salt and pepper. Serve.
